This olive oil is harvested from a multi-generational, family-run farm where centuries-old trees are carefully tended using organic, sustainable, and biodynamic practices. The olives—rare varieties including Frantoio, Leccino, Pendolino, and Arbequina—are hand-picked at peak ripeness and pressed immediately to preserve freshness and maintain a high polyphenol content of 385 mg/kg.
The result is a luminous green oil with vibrant, peppery notes balanced by soft, fruity undertones. With a high smoke point, it’s well-suited for everything from dipping and finishing to roasting and baking.
The farm utilizes closed-loop practices, repurposing olive paste into compost tea to enrich the soil and support pollinators. Irrigation comes from a nutrient-rich pond, reinforcing a deep connection between land, people, and community.
